WHAT: Macallan, along with Glenlivet and Glenfiddich, is one of the top selling Scottish single malts today, yet its dominance is a somewhat recent phenomenon. The Sherry in turn imparts its own dessert-like flavors of dark chocolate and caramel. HOW: Macallan’s 12 year old Double Cask expression uses whiskies matured in both Sherry-seasoned ex-Bourbon barrels and Sherry casks to create a flavor profile that highlights the best of both worlds: the exotic spice and decadence of the European oak and the vanilla of the American oak. WHY: Macallan's Double Cask is a fantastic offshoot of the Sherry Oak series, bringing more spice and complexity of flavor with its use of different oak types in the maturation. Speyside is located in Northeastern, Scotland and its single malts are highly regarded due to its creamy and smooth character with no trace of smoke making them easy to drink. The Macallan is regarded as Speyside top-distiller. Being legal does not mean its right and I find a hard time taking seriously whiskies that add artificial colorants. Macallan is also one of the few distilleries that refrains from using colorants in the whisky. This practice is allowed by the United Kingdom’s Scotch Whisky Regulations and is practically the norm in the industry. The good news is that drams are incredibly good so you can’t go wrong with whichever you choose. The Double Cask is a better choice for those folks like me that prefer deeper oaky notes and a bit of warmth at the end. The Sherry Oak offers rich sweetness that will please most consumers. The Sherry Oak is better than the Double Cask for those new to single malts, Scotch or liquor in general. Macallan Double Cask vs Sherry Oak: which is better? Oloroso is an incredibly sweet and smooth wine from Spain which flavors are very present in this single malt. The Sherry Oak Cask ages for 12 years in hand-picked Oloroso Sherry-seasoned oak casks. The Double Cask ages for 12 years using a combination of American and European oak casks that were previously used to age sherry wine. Differences between the Macallan Double Cask and Sherry Cask I do not agree with such statement but you get the idea of how good this whisky is. 
This whisky is described by F Paul Pacult, the renowned international whisky writer, as ‘simply the best 12 Year Old single malt around’. So if you are new to whisky or are fond of sweet drams you are more likely to enjoy the Sherry Oak over the Double Cask.
The Sherry Oak is a more approachable whisky as its flavor profile is easier to please most people due to the strong caramel notes. This is the sweet version of the Macallan 12 Double Cask and more appealing to most consumers due to the strong sherry wine note. The Macallan Sherry Oak is a nice and mellow dram and with a super smooth mouthfeel with no harshness whatsoever and a pleasing lingering sweet burn making a great sip. Macallan 12 Sherry Oak Cask I’d rather use a cheap blend such as the Dewar’s to make cocktails. Good single malts like this are too pricy and rich in flavors to be drowned in fruity juices. If you are in the market for a whisky to make cocktails the Macallan 12 Double Cask does not make a good mixer. This will tune down the warmth making it easier to drink. The best way of drinking the Macallan Double Cask is neat by adding a few drops of water breaking the whisky allowing floral notes to emerge. It does require certain degree of experience to fully enjoy, though, as the oaky and warm finish can be intimidating for some consumers. The Double Cask is rich in flavors and not too sweet, with a bit of warmth at the end and a marked oaky note making it a very pleasing dram the kind of whisky that I would drink whilst smoking a Cuban cigar. Finish: Lingering oak, a bit warm and sweet.Palate: Creamy, oaky, rich in nutmeg, ginger, raisins and a bit of orange.
